Nope, won't find that kind of stuff in the Service Manual.
There aren't any published books on Keihin CV tuning that
I know of. For auto carbs, however, Holley, in fact, has
a decent tuning guide. See them all over at auto speed 
shops. All the theory applies to bikes, just the details
between Holley carbs and the (insert carb brand here) need
to be understood. That's where the service manual comes in
handy.

Most all carbs have the same basics: idle, mid, power, and
acceleration circuits. Not to mention start and sometimes
deccel enrichment circuits. What makes CV, Mikuni, SU,
Quicksilver, and DellOrto carbs unique is the addition of
variable venturi. 

There is an excellent book by Jack Wagner called "Dellorto
DHLA Installation and Tuning Guide" that is good reading,
and talks about tuning of the Dellorto. The understanding
of this can be applied to the CV. For a general "place to
start" on CV modification, there are numerous published 
sources, but there is also a nice write up in the Harley
Digest web site FAQ, and also on World Wide Glide I think.
